There are a wide variety of cheeses made in Spain. Some Spanish cheeses such as Manchego cheese from La Mancha, are known internationally and some regions like Andalusia make better-known varieties than others. There is also a large variation to the presentation of these cheeses; hard, dark-skinned Manchego to soft questers which come in different sizes and types (fresh, cured semi-cured or pressed), each with their own taste profile depending on how they were prepared: raw pasteurised or creamy milk for example.
